One of our most favorite dinners

I love it when a friend teaches you something especially when it is a good recipe for your family. As an almost vegetarian (we eat fish) we are always looking for high protein foods. Years back I learned about seitan and cooked with it but had never made it myself until my good friend Bohdana showed me how when we were living in Nashville.

here is the recipe:
mix dry ingredients together
2 cups instant vital wheat gluten flour
1/4 cup nutritional yeast
1 t garlic powder
1 t cumin
1 t onion powder
*you can use fresh ingredients but blend it first and add that to the liquids.

Mix liquids
1 cup water
1/2 cup V8
3T soy sauce
1T olive oil

Broth:
10 cups water
1/2 cup V8
1/2 cup soy sauce

pour the liquids into the dry bowl slowly and stir very well. it will get thick like dough and you can kneed it for a bit. Then divide into thirds and put the 3 balls into the simmering broth. Simmer for 20 min then turn the seitan balls and simmer again for 25 min. I leave the lid off while simmering. After the seitan is finished then pull it out and cut it into bites and now it is ready to stir fry.


Now you are ready to do the stir fry!! I use broccoli, onion, garlic, squash, carrots (what ever veggies you like). I stir fry the veggies for a bit w/ olive oil and soy sauce and then add 1/2 cup nutritional yeast and maybe more olive oil and soy sauce to taste. Basically the nutritional yeast and olive oil make a gravy.

Don't forget to get the brown rice cooking when you start to cook the seitan!! Both of my kids love this dinner and Jason too!! This is a meal that is easy and you can make it in stages throughout the day. let me know if you try it and like it and if you have any recipes to pass, send it too.
